This 50% Ibérico acorn-fed ham comes from pigs of certified Ibérico breed, raised free-range and fed on natural products such as acorns and wild herbs. It is one of the front limbs of the animal (note: possible correction — if it's the front limb, it should be "paleta" not "jamón"), and after a careful salting process and 36 to 48 months of curing in natural cellars, it develops deep, unique flavors and aromas.
